I was raised as a vegetarian by my parents and inherited my passion for nourishing, homemade food from my mother. Her mother, my grandma became a vegetarian in the 1950's and raised my mother as a vegetarian. My mother is a diverse cook and is at home in a wide variety of foods, from traditional English dishes, cakes and preserves to world inspired dishes, and even learnt to master the explosive flavours of the Sri Lankan kitchen, the island from where my father's family originates.

My first real experience with cooking was during my university days when the biggest challenge was creating nourishing meals on a budget. When I first moved to Amsterdam in 2006, I was lucky enough to find myself in a relationship with an expert chef and was treated daily to wonderful meals. During this time, I learned from him, though I cooked very little myself, many techniques and cooking methods and his greatest skill - how to make a meal from leftovers or minimal store cupboard essentials. Fast forward a few years and a break up, I found myself cooking for one again. It wasn't until I met my husband, that I actually started cooking for other people. His desire for healthier alternatives and lighter versions of classic dishes, pushed me yet again to explore new ideas.

I hope that this blog will bring together all of the aforementioned skills to help you to get cooking vegetarian food that is affordable, easy, healthy and above all, delicious! As well as posting my own recipes, I want to share my tips and ideas to inspire you to get creative  in the kitchen, making your own exciting dishes and twists on classics.

As this is my first attempt at sharing this with a larger audience, all feedback is welcome - my recipes, photography, writing style, mistakes, whatever! If you make any of my recipes, please share them with me and tag me on instagram! #cookingwithjoseph
