Healthier Cheesecake

A delicious cheesecake, lower in fat and with no added sugar.

I created this recipie for my dear friend, Annelise's birthday this weekend. I'm rather proud of it as I don't often dare to make cakes without a recipie! I wanted to make something festive, yet healthier and not too heavy. It has the essence of a 'healthy breakfast' of yoghurt with fruit and granola, but in cheesecake form.


INGREEDIENTS:

For the base:

  • 200g oats

  • 50g pecans (chopped finely)

  • 1 tsp all spice (I used Dutch 'speculaas kruiden')

  • 80g coconut oil (melted)

  • 4 tablespoons honey

  • A pinch of salt

For the cheesecake filling

  • 200g light cream cheese

  • 500 Greek yogurt (I used 10% fat)

  • 4 tbsp honey

  • 2 eggs

  • 1 teaspoon vanilla extract

  • About 300g fresh berries (Raspberries, blueberries, strawberries etc)


METHOD:

  • Line a quiche dish (or cake tin) with baking paper

  • In a bowl, combine the oats, pecans, all spice, salt, melted coconut oil and honey.

  • Stir until completely combined

  • Spoon the mixture onto the baking paper, pressing it down with the back of a spoon

  • Bake for 10-15 minutes in the middle of the pre-heated oven

  • While it is cooking, make the filling

  • In a large bowl, beat the cream cheese until smooth

  • Add the Greek yogurt, maple syrup, egg and vanilla extract and beat for a few minutes until completely smooth

  • Remove the base from the oven and leave it to cool for about 15 minutes

  • When cool to the touch, spread the filling over the base and bake for about 30 minutes or until just set

  • Leave to cool completely before refrigerating

  • When ready to serve, remove from the fridge and decorate with whatever fruit you have or is in season.
