Date and Pecan Protein balls

Quick and Easy balls of sweet and nutty loveliness. Great for a quick snack on the go or with a cup of coffee.

INGREEDIENTS
1 cup dates (I use medjool as they are soft, sweet and sticky)
1 cup pecan nuts
Optional:
salt
honey or agave syrup
shredded coconut
METHOD
If the dates are a little hard, you can put them in a bowl of warm water for 10 minutes to soften them.
Pit the dates if necessary and put together with the pecans and a pinch of salt in a food processor
Whizz them up to a pulp. The should form a sticky dough (You can add honey or agave syrup if your dates are not already sweet enough)
Roll into equal balls
Roll in shredded coconut to cover them
They keep well in the fridge in an airtight container for a week or so. The freeze really well and defrost quickly, so perfect to grab and go in the morning. Try making variations by using walnuts instead of pecans or sesame seeds instead of shredded coconut.
