Halloumi Fries

Salty, gooey, hot, melted cheese in a crispy spiced casing - Need I say more?!

INGREDIENTS
1 pack halloumi (225g)
4 tbsp polenta
A little olive oil
1 tsp spice*
Sunflower oil (for frying)
*I used my homemade 'zaatar', but you could use anything you like. Your favourite spice - cumin, smoked paprika, Italian herbs or just black pepper
METHOD
Cut the halloumi into chip fries and drizzle with a little olive oil
Mix the polenta and spice and toss in the halloumi
Heat about 2cm of oil (I use sunflower oil) in a pan until really hot. (use a sprinkle of polenta to check - if it sizzles instantly, it's hot enough!)
Fry the halloumi for a few minutes on each side until the cheese is hot and starts to ooze out
Remove carefully from the oil with a spatula or some tongs and pat dry with kitchen roll
Enjoy with your favourite dipping sauce or in pita breads filled with fresh lettuce and cucumber
