Halloumi Fries

Salty, gooey, hot, melted cheese in a crispy spiced casing - Need I say more?!

INGREDIENTS

  • 1 pack halloumi (225g)

  • 4 tbsp polenta

  • A little olive oil

  • 1 tsp spice*

  • Sunflower oil (for frying)

*I used my homemade 'zaatar', but you could use anything you like. Your favourite spice - cumin, smoked paprika, Italian herbs or just black pepper


METHOD

  • Cut the halloumi into chip fries and drizzle with a little olive oil

  • Mix the polenta and spice and toss in the halloumi

  • Heat about 2cm of oil (I use sunflower oil) in a pan until really hot. (use a sprinkle of polenta to check - if it sizzles instantly, it's hot enough!)

  • Fry the halloumi for a few minutes on each side until the cheese is hot and starts to ooze out

  • Remove carefully from the oil with a spatula or some tongs and pat dry with kitchen roll

Enjoy with your favourite dipping sauce or in pita breads filled with fresh lettuce and cucumber
