Roast Cauliflower with Hummus Dressing

The best thing you can do to a cauliflower is roast it!

This is a very simple dish, where the flavour of the cauliflower is really brought to life by being slowly roasted. Don't forget to use the leaves as they have a lovely flavour and texture. Served with a simple hummus dressing, this is great as a side dish or main meal served on a bed of rice or with a nice fresh green salad.


INGREDIENTS

  • 1 large cauliflower (with leaves)

  • 2 onions, quartered

  • 6 cloves garlic, peeled

  • Salt & pepper

  • Olive oil

For the Hummus Dressing:

  • 1 cup hummus

  • 1/2 lemon, juiced and zested

  • 4 tbsp water

METHOD

  • Preheat the oven at 200°C

  • Remove the leaves, wash well and pat dry

  • Cut the cauliflower into florets and the stem into little chunks. Place on a baking tray lined with paper or in an ovenproof dish

  • Place the onion, garlic and cauliflower leaves between the florets, drizzle with a little olive oil and season with salt and pepper.

  • Bake in the oven for 45 minutes

  • Meanwhile, make the dressing by mixing the hummus, lemon and water. Add more water if needed, to make a pourable dressing. No need to season, as the hummus flavours do all the hard work for you
