Roast Cauliflower with Hummus Dressing

The best thing you can do to a cauliflower is roast it!

This is a very simple dish, where the flavour of the cauliflower is really brought to life by being slowly roasted. Don't forget to use the leaves as they have a lovely flavour and texture. Served with a simple hummus dressing, this is great as a side dish or main meal served on a bed of rice or with a nice fresh green salad.
INGREDIENTS
1 large cauliflower (with leaves)
2 onions, quartered
6 cloves garlic, peeled
Salt & pepper
Olive oil
For the Hummus Dressing:
1 cup hummus
1/2 lemon, juiced and zested
4 tbsp water
METHOD
Preheat the oven at 200°C
Remove the leaves, wash well and pat dry
Cut the cauliflower into florets and the stem into little chunks. Place on a baking tray lined with paper or in an ovenproof dish
Place the onion, garlic and cauliflower leaves between the florets, drizzle with a little olive oil and season with salt and pepper.
Bake in the oven for 45 minutes
Meanwhile, make the dressing by mixing the hummus, lemon and water. Add more water if needed, to make a pourable dressing. No need to season, as the hummus flavours do all the hard work for you
