Sweet Potato Lasagne

A delicious twist on the Italian dish using thin slices of sweet potato instead of pasta sheets

This is another non-Joseph recipe, but we enjoyed it so much, I'm sharing it with you. (I also had a few people ask me for the recipe when I posted it on Instagram, so I had already translated it from Dutch to English!) It's from a recipe card I picked up at the Lidl supermarket. Ingreedients:

  • 800g sweet potato, peeled and thinly sliced

  • 10g thyme

  • 2 tbsp olive oil

  • 2 onions, sliced in rings

  • 200g veggie mince

  • 200g cream cheese with herbs

  • 1 jar pesto

  • 100g spinach

  • 400g tomatoes

  • 200g cottage cheese

  • 100g grated 'oude kaas' (or cheddar)

  • 1 ball of mozzarella, sliced

Method:

  • Pre-heat the oven to 200°c

  • Cook the sweet potato for 2 mins in salted, boiling water

  • Heat the oil and fry the onion and thyme for 5 minutes

  • Add the mince and cook for another 5 minutes

  • Turn off the heat, add the cream cheese, pesto and spinach, season with salt & pepper and give a good stir

  • Spoon a small amount of the mixture onto the bottom of the oven dish

  • Lay ¼ of the sweet potato on top

  • Lay ¼ of the tomatoes on top of the sweet potato

  • Repeat the layers 3 times

  • Top with the cottage cheese, followed by the mozzarella slices and grated cheese

  • Bake for 45 minutes in the pre-heated oven
