Sweet Potato Lasagne

A delicious twist on the Italian dish using thin slices of sweet potato instead of pasta sheets
This is another non-Joseph recipe, but we enjoyed it so much, I'm sharing it with you. (I also had a few people ask me for the recipe when I posted it on Instagram, so I had already translated it from Dutch to English!) It's from a recipe card I picked up at the Lidl supermarket. Ingreedients:
800g sweet potato, peeled and thinly sliced
10g thyme
2 tbsp olive oil
2 onions, sliced in rings
200g veggie mince
200g cream cheese with herbs
1 jar pesto
100g spinach
400g tomatoes
200g cottage cheese
100g grated 'oude kaas' (or cheddar)
1 ball of mozzarella, sliced
Method:
Pre-heat the oven to 200°c
Cook the sweet potato for 2 mins in salted, boiling water
Heat the oil and fry the onion and thyme for 5 minutes
Add the mince and cook for another 5 minutes
Turn off the heat, add the cream cheese, pesto and spinach, season with salt & pepper and give a good stir
Spoon a small amount of the mixture onto the bottom of the oven dish
Lay ¼ of the sweet potato on top
Lay ¼ of the tomatoes on top of the sweet potato
Repeat the layers 3 times
Top with the cottage cheese, followed by the mozzarella slices and grated cheese
Bake for 45 minutes in the pre-heated oven
